I have large gaps in my current shed, like 4-6 inches between my tin roof and my joists. So I thought about filling that area, with like foam, but I can't imagine how many cans I would need to do it with. Basically during the summer I will have alot of wasps, and I don't want that this year. So do you think it would be cheaper to build a shed like a 6x8 shed, or fill the existing holes in the shed itself?

You can put a facia board on the ends of the rafters and close the bottom in with plywood. Wes

A new shed would be big $$$ use 1x4 to fill most of the gaps then calk or foam the rest

Also... You need to vent that roof or it will be hot in summer. Try using window screen somehow to control insects. Maybe pallet wood to go in between rafters. Cut right, you can place them in or take off.

Go to the hardware and get some window screen material. the aluminum will last longer. Yo can fold it you and staple it in with T-50 staples. Shoot some foam around the holes. Make sure the can of foam is warm to the touch. Set it out in the sun and let it warm up. You get a lot more foam from it that way. Run a small bead of foam around the edges and let it go into the screen. I would get the window and door foam for the screens and they have some for big gaps... I would put some 1/4" to 1/2" plywood with some short wood screws to hold it up. If outside get the pressure treated.
